Twenty Healthy Low Carb Paleo Inspired Meal Ideas

In my Clean Slate post at the end of last year, I mentioned we would be doing our annual Whole 30, but I need to fess up - I’ve been modifying the basic principals - and I’m really happy with our new and improved weekly menu! I thought I’d share my main recipe sources and my favorite meals from the cook books I use most.

As you can see by scrolling through this post, I’m one of those people who takes photos of her food. Love it or leave it I guess! It keeps me creative and accountable and makes me excited to cook. Cooking healthy can be fun and delicious, so do whatever inspires you to eat well! 

What’s the Whole 30?

In short, it’s a diet plan that focuses on meats and veggies and forbids alcohol, sugar, dairy, grains and beans. Read the full rundown here.

What are we doing differently?

Because one of the main goals of a Whole 30 is to identify what foods might inflame your system, we’ve already tested what does and does not upset our lil tummies. For starters, we’ve minimized the amount of dairy we consume (grass fed butter, milk in coffee and small bits of cheese are examples of our exceptions). In the grain department, we’re not eating refined grains that you’d find in breads or desserts* for most meals but have been eating a lot of quinoa, which we love! In the sugar realm, we still use honey as a sweetener - for my morning coffee and in salad dressings. We also eat things like bacon and sausages made by our local butcher and those tend to have sugars in them. Not a big deal to us! We also love beans - whether it’s black beans or homemade hummus, so we’ve kept them as a big part of our weekly diet. Finally, we’re in the alcohol business and we’re responsible adults, so we’ve chosen to allow ourselves red wine on weekday evenings with dinner and a cocktail or two over the weekend. #noregrets 

But Aren’t you Obsessed with Baking?

*Good call. Yes, yes I am. I plan on baking sweet treats and breads on Saturdays once and a while. Adam has a request in for baguettes and I want to do something with my new springform pan! It’s my personal belief that if you deprive yourself too much, you just go buck wild and throw caution to the wind. It also gives me something to look forward to! 

Where do you get ideas?

I’ve been using two cookbooks almost exclusively and I really love them! They are Primal Cravings by Brandon and Megan Keatley and Inspiralized by Ali Maffucci. I believe in supporting other bloggers and authors, and thus won’t be reposting their original recipes. If you like what you see in these photos, please consider supporting them yourselves and buying their cookbooks! I’ve listed my source in each photo from this post.

I’ve also included photos of easier off the cuff meals I’ve dreamed up myself with memorized family recipes or simple preparations (poaching eggs, basic red pasta sauce, etc) And don’t be afraid to pick up something pre made at the grocery or butcher like veggie kabobs!

Favorite Breakfasts

Breakfast is easily my favorite meal of the day. I love eggs cooked in all sorts of ways - poached, scrambled with veggies or hard boiled (and fried, let’s be real!) And yes you’ll see bacon below and no, not everyone would qualify it as healthy, but if you buy from your local farmer or butcher and eat it minimally, it’s a great way to get a lot of flavor in a little (or big) bite. Only a couple ideas here, but for me, they hit the spot. On the sweet side of things an apple with almond butter satisfies my sweet tooth. If it’s savory you’re after, a hard boiled egg wrapped in prosciutto is a quick flavor filled bite.

WhatIWore: Finally! After a nice break from hair and makeup and taking outfit photos, I’m back today with yesterday’s look. I’ve had a burst of new inspiration coming from an old place - a folder of magazine tears from 2005-2011. I’m working on a little side project and while working my way through them I found old J.Crew catalogue images and photos from Lucky magazine, back in the day when the styling was so weirdo and on point at the same time. This look feels like something their editors might have come up with. 

At least, it’s what I came up with using that vibe as inspiration. And I love it!

I want to point your attention in three directions: the dress, the sweater and the leather moto jacket. First up is the dress, something I sewed up for myself years ago from a retro pattern and only wore once one the blog. I like the pattern and wanted to wear it with a few more modern pieces, which is why I went with this sweater and moto jacket. To complete it all I put on my trusty booties, black beanie and some gray tights I’ve had for a loooong time (dug up this photo from 2008, for example!)

We Went to Belize!

WhatIWore: Last week Adam and I returned from what was easily the most relaxing and restful vacation of my life! We went to a private island off the coast of Belize and spent our days swimming, fishing, napping and reading. It was incredible. Adam surprised me with this trip as a gift for our fifth wedding anniversary. It was a treasure hunt which lead me to a safety deposit box at the bank and inside was the reservation. Two tickets to paradise! A key to enjoy the fantasy suite as a couple! We haven’t had a midwinter beach trip in years and this time Felix was able to stay home with his grandparents, which was also the first time we’d had a night away from him… ever! It all worked out great though! (I have two posts - one on weaning and another on transitioning from co-sleeping to a crib coming up this week or next). 

Back to our trip! We flew into Belize City and stayed one night in a chain hotel, which was really meh compared to the amazing Royal Island Resort via AirBnB (get a $20 off your first stay here) which was about 15 minutes by boat from the coast. The island has five two bedroom beach cottages and we were only one of three occupied cabins on any given night. Most of the time the soft white sand beach was completely empty (!!!) as other guests were off doing their own thing. We opted to stay put and just soak up the sun (although day trips can be arranged). In the water we went kayaking (even to an uninhabited island next door, hello LOST! duh dun), saw giant eagle rays swimming beneath our paddle boards, went fishing and floated/swam around the gorgeous turquoise waters. On dry land we napped, read books (first time I’ve finished a book in 16 plus months, let alone two!), played dozens of games of Gin Rummy, drank 4 bottles of rum and slept 10-11 hours a night. HELL YES says the mom of a toddler. 

Also, the food. Let’s talk about that. The “restaurant” is set up as so, but is really just a kitchen serving a single option per meal. No menus! On our first day we requested to eat Belizean style cuisine, so that’s what we got. Fry Jacks, rice and beans, fried plantains, etc. The food was really great and I managed to lose four pounds, and who the hell does that on vacation? We weren’t restricting ourselves (see above rum consumption), but it was actually pretty paleo friendly. Also: Banana Daiquiris.

Finally - the staff. They were incredible. It felt like we were staying with really helpful friends who didn’t hover. When we needed something, it felt like they were there, but for the most part, we felt like we were completely alone, in a good way. Sherlyn and Bernard checked in on us daily and organized things like my massage and our transportation to and from the airport. Hiro was our boat captain and helped us find the best fishing spot. (Caught 5, first time fishing since I was 10). Roddy was our waiter at the restaurant and we loved him! And the chef, who will remain nameless was incredible. The food was right our our alley. Not too fancy, not too fried, just wholesome and local and delicious.

We were tempted to not share the name of this place, because we wanted it to be our little secret, but it’ll probably be a couple years until we can go back, so we want you to know about it too. It’s incredible. I will never under estimate the power of a restorative beach week ever again. Not only just I have a chance to just be, but I got to spend precious time with Adam and not think about work or being parents or chores or cooking or where to check in on what day. Our decisions were made for us with food, we just had to know what time to show up. We slept like babies. We read and zoned out and eventually wanted to go home. We face timed Felix who was having a blast with his grandparents. It was the perfect vacation. 

So now… photos! But before that, the swimsuits, which was the only thing I wore while I was there (plus a cover up and two rotating dresses). 52 Thoughts | New Year’s Resolutions 2016

After my house is clean, my laundry done and my meals planned for the next week, I finally have the head space to think about how I want to improve myself for the next year. I like the idea of resolutions. Sure - we may not keep all of them, or any of them, but it’s still nice to have some conscious goals to work towards in the name of self improvement. 

LISTENING

I’m trying a lot harder to do less talking about myself (when I’m nervous, it’s easy to do) and instead hear more of what others are saying. Asking open ended questions “how did you do that?” or “tell me more about that” are helping me in this arena. I think I’m a pretty extroverted person, but I sometimes feel really awkward in social situations (read: nervous blabbering mentioned above). 

MAKE ME TIME COUNT (or less reality tv & mindless social media)

Uhhh. I watch way too much TV, especially at night after Felix goes to bed. I’m usually in relaxation mode and don’t want to work on the blog so it’s easy to just plop onto the couch and turn on The Bachelor (ok ok ok, I’m still going to watch it, it’s just reruns on E!, HGTV and The Food Network that I need to cool my jets on) I also think this would be a great time to get back into reading, something I admittedly haven’t done at all since Felix was born. 

And like most people on the planet, I spend too much time on my phone which doesn’t really increase my overall happiness more than anything I could be doing instead. I want to cut that addiction and really limit my facebook and instagram scrolling (I’ll probably narrow them down as well). I think an alarm clock in the bedroom instead of having my phone in there will curb my scrolling time too. On that note, if there’s ever something you absolutely want/need a personal answer for, email is the best way to reach me! 

TWO MINUTE RULE

This is one I mentioned yesterday and from last year’s resolutions. When I’m on it, it really works. In short - if there’s a task that can be completed in less than two minutes - do it now. And trust me - there are a lot of things that can be scratched off your list in that amount of time! Picking up toys, vacuuming, switching over the laundry, emptying the dishwasher, etc. Just carrying a load of whatever up or down the stairs on my way makes everything a little more settled. 

ACCENTUATE THE POSITIVE

Eliminate the negative. Embrace the affirmative. And don’t mess with Mr. Inbetween.
